Vegan Del Rey

I live in beautiful Playa Del Rey, California. I love the warm weather, the beaches, and the fact that my parents live close to my home. I enjoy spending my free time with my family and my partner who samples all my vegan and non-vegan cooking. My loved ones are all picky eaters but seem to "gobble up" all that I create. Most of the recipes you see here are not my own, however,I have given credit where it was due. Sit back and enjoy!!!!

Spring Rolls


These spring rolls are one of my favorite summer meals. Unlike their "cousins" (eggrolls), these spring rolls are fresh (not fried nor baked). Here is a tasty recipe that I follow when making them: Spring roll recipe. They also provide a great dipping sauce recipe as well. I followed the recipe exactly, however, I added cucumber spears (cut into "matchstick" slices) to the rolls and added smooth natural peanut butter (about 1/2 cup) to the sauce. Yum!!! Not only does it provide a tutorial on how to roll them it gives advice on selecting a brand and also show how these wrappers are made. It seems like a tedious process to make them so I'll opt on buying them for now :o).
